The details
Iced (flash-chilled)
A starting conversion: the same leaf, brewed in half the hot water with a slightly longer steep, then poured straight over the same weight of ice.
Cold brew (mizudashi)
Leaf in cold water in the fridge, at least 500 ml, with a ratio and time set per style: about 3 to 4 hours for sencha and gyokuro, 5 to 6 for genmaicha, bancha, and hojicha, 6 for white, 8 for most oolongs and herbal teas, 10 to 12 for black and dark teas.
Ice brew (kōridashi)
For gyokuro, sencha, and other delicate greens: a lot of leaf under ice at room temperature, steeping in the meltwater over two or three hours. A small, thick, sweet, savory cup.
Why it works
Cold brewing generally produces less bitterness and astringency, so it's forgiving. Matcha isn't cold brewed; it's whisked or shaken instead.
